We recently wrote about five foodie finds that you can't go without on your next trip to Belize! Well, what Caribbean vacation is complete without some tropical refreshments to pair with your fare?
Whether you want a cocktail or a cool virgin drink, we can make these absolutely delicious either way, and now you have the recipe for sweet success in drink making too!
Let's start with our Dragon Fruit Mojito… Dragon Fruit is also known has "Pitaya". The fruit grows on a large cactus and is absolutely gorgeous in color and delicious in flavor. The flavor is juicy and sweet- similar to a honeydew melon, and the fruit can be pink or white. In Belize, we often see the stunning pink color! This fruit is not only tasty, it is also very it is high in fiber as well as various vitamins and minerals including manganese and iron
Dragon fruit can be found year-round, but season peaks in summer and lasts into early fall. It's unique skin, shape, and color make it easy to spot in the produce section of your local grocery store!
Dragon Fruit Mojito
INGREDIENTS
1.5oz. White Rum
0.5oz. Triple Sec
1 tsp. Sugar
8 Mint Leaves
2 tbsp. Dragon Fruit
0.5 oz. Lime Juice, Freshly Squeezed
INSTRUCTIONS
Place dragon fruit, mint leaves, sugar, and lime juice in the bottom of a highball glass.
Muddle to bruise mint leaves and break apart fruit.
Add rum and triple sec and shake with the rest of the ingredients.
Top off with soda water and garnish with mint leaves and dragon fruit slices.

Next up, we have the appropriately named Drunken Cucumber. This is a great drink either fashioned as and adult drink or equally refreshing in the virgin variety.
Drunken Cucumber
1.5oz White Rum
Muddled Cucumber
Lime
Fresh Ginger
1.5oz White Rum
Strained over ice
INSTRUCTIONS
Muddle a small bit of cucumber and fresh ginger in a glass, add the muddled mixture and white rum in a shaker with ice.
Shake to mix and chill.
Strain into a low ball glass over ice
Garnish with a cucumber and serve.
Practice makes perfect and soon you will be a consummate drink connoisseur. Oh, and we strongly recommend scheduling some hammock time while enjoying these refreshments!
